A flavour combination almost all dad’s are going to love this Father’ Day – cinnamon spiced cupcakes topped with maple syrup buttercream and crispy bacon bits. That’s the focus of Let’s Bake! this week as we approach the big day on the 19th.

Ingredients

For the Cupcakes

  • 125g unslated butter
  • 125g unrefined light muscovado sugar
  • 2 medium eggs
  • 1/2 a teaspoon vanilla extract
  • 175g self raising white flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup

For the Buttercream

  • 250g unsalted butter
  • 500g icing sugar
  • 2 tablespoons maple syrup
  • 3 streaky bacon rashers
  • Maple syrup (for drizzling)

Method

  • Preheat oven to 180 C (350 F/Gas Mark 4) or 160 C (320 F/Gas Mark 3) for fan assisted ovens. Line a 12 hole muffin/cupcake tin with cupcake cases.
  • Place the butter and sugar in a mixing bowl and beat until light and fluffy. Gradually beat in the eggs and vanilla extract a bit at a time until smooth. Add a touch of the flour if it starts to curdle.
  • Sift and fold the flour and cinnamon into the mixture before folding in the maple syrup.
  • Divide the mixture evenly between the cupcake cases and bake for 18-20 minutes or until a skewer comes out clean. Remove and leave to cool.
  • In a clean bowl beat the butter until softened then add half the icing sugar, beat through and then add the other half and repeat. Add the maple syrup and mix. If required, add a tablespoon of milk to loosen the mixture.
  • Grill the bacon until crispy and allow to cool before cutting into 1 inch pieces.
  • Pipe swirls of the icing on top of each cupcake and add the bacon to the top. 
  • Finish with a drizzle of maple syrup.

We recommend making these on the day – or at least leaving the bacon until Father’s Day so you can treat dad to a fresh and delicious treat!
