Eggnog Recipes for your Christmas parties

We’ll admit it. It’s proving hugely difficult to get hold of a stock of eggnog for you this year. We’re not going to get it in in time for you to order. There seems to be a worldwide shortage, which just goes to show how popular it is! We don’t want you to go without though, so we’ve got two recipes for you to make your own – a traditional, alcoholic one (hic!) and a low fat one for those of you who don’t want to bulk up over Christmas! Enjoy!

Traditional Eggnog Recipe

What You’ll Need:

12 eggs, separated
6 cups of milk
2 cups of thickened cream
2 cups of bourbon
1.5 cups of sugar
3/4 cup of brandy
2 teaspoons of ground nutmeg

What To Do:

1. Beat the egg yolks and sugar for approx 10 minutes in a large bowl using a mixer until firm
2. Add in the bourbon and brandy, just a little bit at a time
3. Allow the mixture to cool in the fridge for up to 6 hours once all the alcohol has been added
4. Half an hour before your guests arrive, stir in the milk
5. Add the ground nutmeg and stir
6. Beat the cream in a separate bowl using a mixer on high speed until the cream forms stiff peaks
7. Beat the egg whites in another bowl until stiff peaks form
8. Gently fold the egg whites into the egg yolks
9. Gently fold the cream into the egg mixture
10. Ladle into appropriate cups and sprinkle with a dusting of nutmeg

Serves 8

Voilà! The perfect, traditional eggnog for you, your family and your guests to enjoy! Now for the low fat version.

Low Fat/Non-Alcoholic Eggnog Recipe

What You’ll Need:

3/4 cup of sugar
1/4 teaspoon of cinnamon
1/4 teaspoon of freshly grated nutmeg
1 egg
4 egg whites
1.5 cups of fat free milk
1.5 cups of fat free half-and-half (use 3/4 cup of fat free milk and 3/4 of fat free single cream if you can’t find proper half-and-half)
1.5 teaspoons of vanilla extract
Freshly grated nutmeg to garnish

What To Do:

1. Combine the sugar, cinnamon and nutmeg in a large bowl
2. Add the egg and egg whites and beat for 3-4 minutes with a mixer
3. Heat the fat free milk in a large saucepan on a low heat
4. Gradually stir the egg mixture into the hot milk
5. Heat, stirring constantly, until mixture is slightly thickened
6. Stir in vanilla extract and remove from heat
7. Allow to cool slightly, then blend with the fat-free half-and-half mixture
8. Cover and chill in the refrigerator
9. Before serving sprinkle with freshly grated nutmeg

Serves 4

Low in calories, no alcohol but just as delicious. And if it looks a little too pale compared to the full fat version, just add a drop of yellow food colouring.
